I miss eating Indian food!


I miss eating Indian food! I love Indian cuisine, and as a vegetarian, Indian restaurants used to be the easy choice since they always have more vegetarian options than not. However, few years ago I became allergic to cinnamon and mango, ingredients in most if not all Indian mixed spices. Most restaurants used premixed spices so Indian food is pretty much out for me unless I make it.

With all the fresh cilantro, peas, spinach, and onions out at the market my craving for Indian inspired dishes is flaring up again so I thought it would be fun to add some on the menu for you to try as well. My darling friend Punam, is an amazing cook and I have watched her make food a million times. There is an art to mixing the spices, knowing when to add what seasonings next, and how much to toast the seeds, or the aromatics. I am no where near knowing what comes naturally to Punam but she gifted me with a spice box which contains several smaller containers in it that holds the basic Indian spices. I had to modify mine and take the mango powder out but when I use the tin, I feel like I am doing it all correct and authentic ;) Yum!

So, I hope you will try some of the Indian inspired dishes this week :) and also (as always) the dishes on this weeks menu are dictated by what is growing locally and organic such as ... strawberries, peas, savoy, carrots, fresh onion and garlic, green onions...
