How exciting it was to visit the farmers market yesterday...


It was nice having a couple of weeks off but I can not tell you how exciting it was to visit farmers market yesterday to place orders for this weeks menu. Of course the weather was beautiful and as I met with each one of the farmers I ended up buying all kinds of fruit and veg I really don't need but they just looked soooo good!!! Yikes, it will be a busy week trying figure out what to do with all this stuff. Chutney's, Pickles and Jams I guess?!?

Anyway, since summer season is coming to an end soon, I want to squeeze in as much summer veg and fruits as I can for the next couple of weeks and before we start the winter squash and pumpkin season.

Suggestions:

Escabeche is usually prepared by drenching the fish in flour and pan searing before cooking with the veg. We will NOT use any starch/flour. It usually is marinated in some sort of acid to make it light and take away from cooking time. Escabeche is goes great with rice or you can use it to make tacos. Just add sour cream and some chopped fresh tomatoes, squeeze a little lemon and you will have a delicious fish taco.

Wellness Sauce is packed with good for you ingredients. I love using it on everything. You can use it as a sauce for your meats. It can be a sauce for some steamed veg and rice to make a complete meal. It can also be added to broth to make soup. It will keep for couple of weeks in the fridge.

Figs- My grandfather used to say that figs are "fruit of paradise". If you have not tried fresh figs before, this is the time of the year to do so. Some of the fig on this weeks salad will come from my fig tree and some are from local farms. Hopefully we can find several kinds for you to try.

Double celery soup- It is one of the most popular soups we make. It is very light yet fragrant in flavor. Base is veg broth and white beans for added protein.

Spicy Garbanzo- When my daughter became vegetarian last year, I came up with this dish as it is the only way she would eat garbanzo's. Spicy! Oregano and cumin will help those who have a hard time eating beans in general.

Crab Mac and Cheese- We had this on the menu not too long ago but several of our regular customers were on vacation and missed it. So they requested that we offer it again. We try to make this lower in calorie by subbing some of the cheese with skim milk cheese and also use clear veg broth for the sauce instead of all cream. It is not a low fat meal but it is certainly lower in fat and calorie than the average mac and cheese....it is delicious, and I don't even like crabs!

Anyway, I had tons of fun looking for ingredients for this weeks menu and look forward to preparing them. We hope you will enjoy them as much as we enjoy preparing them for you.
