I had an amazing pasta dish ...


The first time Husband and I went out to dinner (we were not calling it a date) I had an amazing pasta dish that I have not forgotten after all these years. It was not creamy, but it had a layer of juice of the mushrooms and some other flavor that was new to me.

I came to find out, the flavor I could not pin point on was White Truffles. Everyone loves truffles but black truffles are what is usually found in salts, oils or on menus. I personally prefer white truffles as they have a more subtle and deep flavor vs. quick and overpowering. Late fall and early winter is the time of the year for them to appear and I have been trying to find a supplier that has them for a reasonable price so that I could include a shaving or two on top of a menu item for you.

At $125 per ounce, I had to settle for a good quality white truffle oil which is still pricey but satisfying enough. So I am excited to prepare a pasta dish for you with the White truffle oil and wild mushrooms, reminding me of the first dinner with Husband. As usual, items on the menu are dictated by what is growing locally, organic and available at the markets.
