Now that the feasting season is over...


Now that the feasting season is over, my scale is not being kind to me, and my jeans feel a little tighter than they should, so it is time to go back to healthy eating.

I am guessing most of us have eating healthier on our New Years resolution list. I feel blessed that I was taught the basics of eating healthy and I am able to provide this way of eating to you as well.

My parents were amazing with always eating well and healthy. We never ate anything that came out of a box, or a package unless it was dried beans, nuts, rice, or pasta. The only can food we ever had was tomato sauce or paste. Simple intentional eating habits were the only eating habits they practiced.

Being born in a region between the Caspian Sea and the Mediterranean Sea, a Mediterranean diet was the only way of eating.

This weeks menu is filled with some of my parents favorite ingredients such as Artchokes, tomatoes, spinach, beets, carrots, hazelnuts, garbanzo, fennel, olives, radicchio, capers, and more.

Papa was a big fan of fish. Flounder and rock fish in particular. This week were are able to get some wild caught flounder, so I thought we would prepare it for you the way Papa used to make it for me. He would season the fish lightly and drizzle some fresh lime or lemon juice on it. While the fish was marinating, he would cut some onions in quarters or large wedges and sear them with olive oil in a pan. Then he would add the fish to the pan and cook them for a few minutes and take them out. Using the drippings left in the pan, he would toss some tomatoes and herbs for another few minutes, sprinkle them with capers and voila! served on white rice, even this vegetarian could not resist this dish!
