She said in Australia, she ate tomatoes- I pride myself in being able to convince people to eat more veg. I go at it from many angles. Environmental, health, weigh loss, economical..... and it usually works, except for one person.

Am is one of my favorite people in the world, and I can not for the life of me get her to love veg. Guacamole, sushi and glazed carrots are the only times I have seen her actually enjoy veg and greens. If it's not battered and deep fried, wrapped with bacon, or in a taco shell, forget about it. No matter how I try to squeeze in veg in any meal we share, I watch her pick them out or eat around it. Nothing works!

I especially felt defeated when she had said to me she ate tomatoes when she lived Down Under. When in season or from my garden, I tried serving tomatoes to her with no luck. I thought there must be something in the soil there that makes the tomatoes taste different??? Then, the other day when I had prepared some slow roasted cherry tomatoes and mixed it with basil and olives, she filled up her plate and showed it to me with excitement.

"Ez!" she said, "this is what I used to eat with orzo in Australia". VICTORIOUS is how I felt! For the first time I saw Am eat the entire plate of food without picking the tomatoes and greens out of it. So, the Pasta dish this week is exactly what she told me she likes and in my heart I will be so happy to know that she will be eating all her vegetables whenever I prepare this dish for her. The list is slowly expanding :)

We hope this weeks menu puts a smile on your faces the way the little tomatoes did on Am's face!

We will be closed next week due to a the holidays and overwhelming amount of events we have been and will be part of. We tried choosing a versitle menu that would keep well in your fridge or freezer and hold you over till we are back on the regular schedule.
