So many things I want to tell you but it's a busy week for us so I will make it some what short, to the point and spare you with my stream of consciousness blurb.

Sweet Potatoes- Sweet Potatoes have remarkable health benefits. My favorite is slowing down aging :) I kid you not, I recently read that the people of Okinawa, Japan have traditionally enjoyed one of the highest life expectancies in the world. I used to think people of Azerbaijan (my parents home country) held this title. One the secrets for longevity for people of Okinawa, is eating lots and lots of sweet potatoes. The traditional Okinawan diet consists of minimal meat, dairy, eggs, and processed foods. Instead, they eat mostly whole plant foods. And they get a remarkable 60% of their calories from sweet potatoes alone. Scientists have found that sweet potatoes are among the best sources of Vitamin A packed with vitamin B5, riboflavin, niacin, thiamin, and carotenoids. The sweet potato, not only contains many nutrients, but it is also packed with medicinal benefits. It is said that sweet potatoes contain anti-inflammatory, anti-diabetic, and anticancer properties. They support digestive and hearth health, boost your immunity, fuel your brain, are good for your eyes, help ease stress and anxiety, .... No wonder the people of Okinawa live so long.

Goat Milk- We have an opportunity to get some really good and mild in flavor goat milk this week. Goat milk is said to be healthier than cow for many reasons but here is a few. Goats are mostly pasture raised so right there you have a healthier animal to start with. Goat milk contains slightly less carbohydrates and is much higher in Omega-3. It is easier to digest, and has slightly less lactose. It is an excellent source of B vitamins, vitamin A and protein. So this week we will make the Persian/Azari dip that we usually make with cow's milk, with this goat milk yogurt. I love it with lentil rice, YUM! So I guess we should make lentil rice for you as well. If you really want the full experience, make yourself a fried egg and put it on top of the lentil rice, spoon some of yogurt mixture on the side and voila! 😋
