Menu conversations- When your right-hand man, well in my case woman, is %100 in tune with your mission and vision, it just makes the world go around so much easier. Laura is that and then some.... Thursdays and Fridays we try to discuss the menu according to what will be available locally in the next few days and this how our conversations go...
Me: Roberto is growing organic purple and yellow cauliflowers and I want to make a salad with them.
At the same time I am thinking, but that could sometimes be hard on your stomach and before I even say anything she chimes in.
Laura: I really think we should ferment or pickle the cauliflower.
Me: Yeah we just made kimchi that should be ready in a week or so but I really want to use the cauli in salad because I already ordered white cauliflower for a side dish.
Laura: lets add fennel seed to aid its digestion then.
Me: Cabbages will be amazing and I want to serve them with poached Cod.
after a short pause....
Laura: What? cabbage and fish?
I can hear her looking it up online while she is laughing....
Me: If I poach the fish with port and cook the cabbage with port as well then they will go together.
Laura: You are something else Ezie?!?! how about vermouth instead of port and lets add some mustard seeds to it.
Turns out the added herbs and spices in vermouth, particularly the bitter ones, aid in digestion. Also mustard seeds are very rich in calcium, manganese, omega 3 fatty acids, iron, zinc, protein and dietary fiber. She is always thinking....
Me: Oh, Melody says she will have eggplants, and Roberto has green tomatoes, what about putting the two together.
Laura: Well, how about adding tahini to the eggplant?
well, tahini has anti inflammatory and antioxidant properties. Good to have with nightshade plants.
Anyway, you get the idea. So as usual the menu is designed around what is available local, organic, and seasonal with lots of thought, love and Laura's knowledge.
