Comfort Food !!!


Comfort Food... Borscht , lentil rice, pasta with pesto, roasted cabbage, and steamed potatoes are some of the first meals that come to my mind when I think of comfort foods.

Borscht was Papa's favorite winter dish. I came across a recipe recently in a health magazine that I think you will enjoy. This version allows me to add the broth at the end so that I can give the option of beef or veg broth.

I love lentils of any kind but Persian lentil rice wins the prize. Top it with raisins and dates cooked with caramelized onions, it becomes a super food. Lentils are an excellent source of molybdenum and folate.They are a very good source of dietary fiber, copper, phosphorus and manganese. Additionally they are a good source of iron, protein, vitamin B1, pantothenic acid, zinc, potassium and vitamin B6. Anyway, a plate of this bounty of deliciousness packed with nutrients is heartwarming comfort food to me and my family. I hope it will be the same for you.

A bowl of pasta of course is always comfort food. When pasta is not paired with meats, it is easier on our bodies. The nuts in pesto are good source of protein and the kale of course takes the guilt away :) Warm bowl of green pesto coated pasta is as comforting as it can get. At least for me.
