Onions just don't get the credit they deserve! Honestly... they usually take the blame for indigestion and other stomach issues but like many other fresh foods, if combined with correct ingredients, onions are considered a super-food that will not bother you or your gut. In-fact onions are considered some of the best probiotics and high in fiber foods in which promote gut health. Onions are part of the Allium family of vegetables which include garlic(we know how super they are!), shallots,scallions, leeks, and chives. Besides adding flavor to dishes, there are many health benefits in eating onions. Allium have anti-inflammatory and antioxidant properties, they strengthen immunity, may help lower cholesterol and blood pressure, may help to prevent certain types of cancer, and may help regulate blood sugar levels. The great thing about onions/allium is that they are always available, they can be cooked in many ways and add tons of flavor to any dish and not necessarily can always be detected. Classic recipes, French, Italian, Middle Eastern, Asian, Island,... more often start with onion than not.
This weeks menu is inspired by Onion and it's family. We will caramelize, pickle, roast, saute, braise, boil, and serve them raw, so you can enjoy the various flavors and benefits.
