Herbs- There are many health benefits...


Herbs- We all know there are many health benefits to herbs and herbal medicine is an ancient practice of healing in many cultures, but the most common way to use herbs is in cooking. I read an interesting article discussing the use of herbs in cookery and how it might have begun when more economical cuts of meat needed to become desirable and take the place of those that were expensive and more favored.

This might have been true in ancient times but these days the love for herbs is for their own flavor and aroma. We use herbs more as a pairing of flavor rather than disguising.


In Persian/Azari homes, you will often find a platter of mixed herbs on the center of the table for everyone to share as they take bites of their meal. It is amazing how all herbs pretty much go with every dish. A typical herb plate (sabzi khordan) includes but is not limited to cilantro, basil, chives, parsley, tarragon, savory... sometimes accompanied with radishes, hot peppers and feta cheese. This plate is not a substitute for salad. It is almost like having salt and pepper or a condiment on the table.

A Couple of the local farms mentioned that their herbs are doing wonderfully this week and so I ordered a boat load of them to Pick up this weekend. Since I can not invite you all to my house to sit around the table and enjoy the Sabzi Khordan plate with us, I thought I would use them in most of the dishes on this week's menu.
