Leeks are one of those items in the grocery section that often get ignored. I guess this because I notice that the poor leeks are looking pretty sad and they look like the top layers keeps getting peeled off to expose the fresher interior over and over. I'm guessing the difficult task of getting all the sand and grit that get in between each layer is one of the reasons this gorgeous veg gets ignored. Leeks are not only tasty but are considered a SUPERFOOD. This superfood contains high levels of flavonoids, vitamins A, E, and K. It is high in Fibers and rich in compounds such as calcium, iron, potassium and magnesium. They are fat free and very low in calories.

Sis #1 is a trained pastry chef but also cooks amazing savory dishes. I talk to her almost every day and of course most of our conversations are about food and what is for dinner night. Braising leeks with vinegar is something she does regularly, and her and her husband enjoy them as a side dish or a snack. I finally tried this not too long ago and the first thing that came to my mind was Mascarpone Of Course mascarpone makes everything taste better but his combination with pasta is in my opinion just YUM YUM!!! Adding roasted artichoke hearts just kicks it up a notch ;)

Using meat in soups is a rarity for me but chicken soup is notorious for being a cure-all for the body and the soul. When I was thinking of using leeks in another dish I thought you might enjoy a warm chicken soup with leeks and herbaceous tarragon while we are in the last stretch of winter.
