Oh! lots of exciting food to be made this week...


I am super excited to reconnect with our Seafood Supplier in Alaska. I had decided to stop getting fish from them due to pricing. They have enough demand for their products that it does not make sense for them to offer us bulk/wholesale discounts anymore. However, after speaking to some of you about this, we decided to try some items and just price things accordingly. Getting the gorgeous healthy stuff is definitely worth it! This week we will start with Alaskan Lingcod- Lingcod is not actually a cod but the meat looks similar and flakes similar to a true cod. I think it is less bland in flavor as well. I had to call it superfood because of all the super health benefits that comes with this dish. Lingcod is rich in nutrients such as omega-3 essential fatty acids, vitamin A, B12, niacin, selenium, amino acids, and potassium. Grapes are an excellent source of antioxidants, vitamin A, C, B6 and folate. Grapes are said to help prevent heart heart disease and Alzhemers. Pomegranate as you all know has many many benefits including reducing risk of chronic disease and inflammation. Emils lettuce wrap- I was working on this menu and instead of working with me I could hear Emil bustling around in the kitchen. Then she sends for me to go and try what she had made. My goodness, I could not stop eating it! Let me tell you, Emil has this special love for lettuce wraps. Well she loves lettuce and lime probably more than any edible thing in the world. Add onion, garlic and some crunchy stuff to it, she is in heaven. So lettuce wrap is the perfect dish for her. She has tried perfecting lettuce wrap recipes to her own liking vs. the salty greasy ones you can get from local chain restaurants. Don't get me wrong, she loves them all but she also knows they are not the healthiest choice. Today she made a small batch to try and I think this time she hit a home run. I pretty much ate it right out of the pan. It was so good that I had to share it with you. As it was added last minute to the menu, you will see it as the Special of The Week. If you decide to try it, get yourself some Boston or Iceberg lettuce and take the leaves apart. Heat up the filling and scoop some in the lettuce leaves. Squeeze a few drops of lime juice on it and ENJOY! I am always so excited about the food we make. I'm serious! It is very exciting to be able to get amazing fish from alaska or local eggs and microgreens from my farmer friends. I see the box of fresh eggs and it just screams EGG SALAD. I think it is super special when one of my favorite farmers is going to go out in the cold and dig for sunchokes in the frozen ground so I can make salad for you. And then there is the box of blood oranges that is patiently waiting for fennel bulbs to arrive :) . ... you get what I am saying, beautiful healthy stuff waiting to become gorgeous dishes to be enjoyed by people who appreciate it ... it's all about the food, eh?
