Emil has been telling me for the longest time that she wants us to include Zuppa Toscana on the menu. She learned how to make it from Papa Joe. I don't really like the idea of offering sausage, well I should say I didn't till now. My worry has always been that who knows how many million things go in a casing of a sausage? MSG? bread crumbs? What other things you can't remember how to spell?
I mentioned in one of my emails a few weeks ago that I am excited about having our meats provided by Pleasant Vale farm. We were given some samples of the sausages to try. When Husband grilled a couple of them, he said, "Ezie, if you ever ate sausage, you would love this! lean and clean". Well, I can't say I am ready to try the sausage, even vegetarian sausage doesn't sound appetizing to me but I am looking forward to finally including Zuppa Toscana on the menu. We had salmon on the menu only two weeks ago but these days if they tell me a new shipment of the Faroe salmon is going to come in, I figure I should get it when I can. Fingers crossed, it actually does arrive. It is a perfect time of year for Escabeche. Summer sweet peppers are still around and carrots that were planted earlier in the season are giant and getting pulled out to make room for new seedlings. This is one of those dishes that can be served hot, cold, or at room temp. As a first course, main course, or with a salad. It is one of the popular dishes only 2nd to the Orzo salad for our catering events.
